This delicious chickpea curry is a perfect weeknight meal seasoned with Foodin Madras curry. Serve it with potatoes and rice. - Preparation Time: 30 minutes

Ingredients:
- 1 can chickpeas (about 400 g) - 1 medium onion
- 2 garlic cloves
- 1 medium potato
- 1 can coconut milk (about 400 ml)
- 2 tablespoons Foodin Madras curry spice mix
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Peel and chop the onion and garlic. Peel and dice the potato. 2. Heat the oil in a large pan over medium heat. Add the onions and garlic, sautéing until soft.
3. Add the diced potato to the pan and cook for about 5 minutes.
4. Stir in the drained chickpeas and Madras curry spice mix. Mix well.
5. Pour the coconut milk into the pan and stir. Let the curry simmer on low heat for about 15 minutes, until the potatoes are tender.
6. Season with salt to taste. Serve with rice and potatoes, and garnish with fresh cilantro if desired.
