Serving Size: 4-6 servings
Ingredients:
- 800 g lamb meat (e.g., shoulder or shank), cubed- 2 tbsp oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 2 cm piece of ginger, grated
- 2-3 chilies, chopped (to taste)
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander powder
- 400 g crushed tomatoes
- 400 ml coconut milk
- Salt to taste
- Fresh coriander for garnish
- Juice of 1 lemon
Instructions:
1. Heat oil in a large pot over medium heat. Add chopped onion and sauté until soft and golden brown.2. Add crushed garlic, grated ginger, and chopped chilies. Cook for a few more minutes.
3. Add lamb to the pot and brown it on all sides.
4. Sprinkle curry powder, turmeric, cumin, and coriander over the meat and mix well.
5. Pour in crushed tomatoes and coconut milk. Add salt and stir.
6. Bring the curry to a boil, then reduce the heat and cover the pot. Simmer on low heat for at least 1.5 hours until the meat is tender.
7. Add lemon juice just before serving and mix well.
8. Garnish with fresh coriander and serve with rice or naan bread.
