Feta-Olive Bruschetta

A delightful Mediterranean appetizer featuring baked feta and olives, perfect for sharing. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 100 g feta cheese
- 1 garlic clove
- 10-12 black and green olives (preferably Greek)
- Fresh thyme leaves (from a couple of small sprigs)
- Black pepper
- A small pinch of lemon zest
- A couple of sprinkles of dried oregano
- Olive oil
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Cut the feta cheese into small cubes and pit the olives.
3. Finely chop the garlic clove.
4. Gently mix all the ingredients together in a bowl.
5. Transfer the mixture to a small baking dish or a foil-wrapped bowl and bake for about 10-15 minutes.
6. While the feta is baking, slice some bread into thin pieces and either warm them in the oven alongside the feta or toast them in a pan for a crispier finish.
7. Spoon the feta-olive mixture onto the bread and drizzle a bit of the olive oil from the dish over the top.
8. Grind some black pepper over the bruschetta and serve immediately while warm.
