Ingredients:
- 1 loaf of bread (such as ciabatta or baguette) - 2-3 garlic cloves
- 2-3 tomatoes
- 1/2 red onion
- 1 cup fresh basil
- 1 cup mozzarella cheese (diced)
- 1 cup grated Parmesan cheese
- 1/2 cup olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C (400°F). 2. Slice the bread into pieces and place them on a baking sheet.
3. Brush the bread slices with olive oil and rub with a garlic clove.
4. Toast the bread slices in the oven for about 5-7 minutes until golden brown.
5. Prepare the toppings: dice the tomatoes and red onion, and mix them in a bowl with basil, mozzarella, balsamic vinegar, salt, and pepper.
6. Remove the bread from the oven and top each slice with the tomato mixture.
7. Sprinkle grated Parmesan cheese on top.
8. Serve immediately while warm.
