Ingredients:
- 300 g pasta (e.g., penne or spaghetti) - 200 g fresh mushrooms (e.g., button or chanterelles)
- 150 g fresh spinach
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Grated Parmesan cheese (for serving)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water. 2. Chop the onion and garlic. Heat the olive oil in a pan over medium heat and add the onion. Sauté until the onion is soft.
3. Add the chopped mushrooms to the pan and cook until they are beautifully golden brown.
4. Add the garlic and sauté for another minute.
5. Add the fresh spinach to the pan and stir until it wilts.
6. Pour the cream into the pan and mix well. Allow the sauce to simmer on low heat for about 5 minutes. Season with salt and black pepper.
7. Add the cooked pasta to the sauce and stir to combine. If the sauce is too thick, you can add a little reserved pasta water.
8. Serve warm topped with grated Parmesan cheese.
