Ingredients:
For the Pepper Steak: - 2 x 150-200 g beef tenderloin steaks
- Freshly ground five peppercorns (generously)
- Grill seasoning
- Salt
- Butter (for frying)
- Oil (for frying)
For the Marsala Sauce:
- Drippings from the skillet
- 1 dl water
- Ground five peppercorns
- 1 dl Marsala wine
- 1 tbsp whiskey
- 2 tbsp tomato paste
- 2 tbsp butter
For the Pont Neuf Potatoes:
- 2 potatoes (e.g., Rosamunda)
- Butter
- Garlic
- Thyme
Instructions:
1. Season the beef tenderloin steaks generously with five peppercorns, grill seasoning, and salt. 2. Heat butter and oil in a skillet, and cook the steaks on both sides to your desired doneness. Remove the steaks from the skillet and let them rest.
3. Prepare the Marsala Sauce: Pour the drippings from the skillet into a saucepan. Add water, ground five peppercorns, Marsala wine, whiskey, and tomato paste. Simmer for about 5 minutes until slightly thickened. Finally, add butter and stir well.
4. Peel and cut the potatoes into sticks. In a skillet, heat butter and add garlic and thyme. Fry the potatoes until golden brown and crispy.
5. Serve the steaks with Marsala sauce and Pont Neuf potatoes on the side.
