A rich and flavorful creamy mushroom soup, perfect as a starter or a light main dish. Easy to prepare, ideal for both everyday meals and special occasions. Preparation Time: 30 minutes

Ingredients:
- 400 g fresh mushrooms - 1 medium onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean the mushrooms and chop them into small pieces. 2. Peel and finely chop the onion and garlic.
3. Heat the butter in a pot over medium heat and add the onion. Sauté until the onion is soft.
4. Add the garlic and mushrooms to the pot. Cook for about 5-7 minutes until the mushrooms are tender and the moisture has evaporated.
5. Pour in the vegetable broth and bring to a boil. Let it simmer for about 10 minutes.
6. Add the cream and season with salt and black pepper. Let it cook for a few more minutes.
7. Use an immersion blender or a regular blender to puree the soup until smooth.
8. Serve the soup hot, garnished with fresh parsley.
