A delicious stew made with fresh pumpkin that adds sweetness to tender pork. Perfect to enjoy during relaxation, paired with wine or beer.

Ingredients:
- 600 g pork (such as shoulder or stew meat)
- 500 g fresh pumpkin, diced
- 2 onions, chopped
- 3 cloves garlic, crushed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 100 ml chicken broth
- 100 ml red wine or beer
Instructions:
1. Heat the olive oil in a large skillet and brown the pork on all sides.
2. Add the onions and garlic to the skillet and sauté until they are soft.
3. Transfer the mixture to a baking dish and add the diced pumpkin, salt, black pepper, and rosemary.
4. Pour the chicken broth and red wine (or beer) into the dish.
5. Cover the dish with foil and bake at 180°C (350°F) for about 1.5 hours or until the meat is tender.
6. Remove the foil and bake for an additional 15 minutes to achieve a nice color on top.
Serve the pumpkin pork stew warm.
