These flavorful tacos combine the sweetness of pumpkin and the spiciness of chorizo, topped with tangy pickled red onions for a delicious and satisfying meal.
Ingredients:
- 400 g pumpkin (cubed)
- 200 g chorizo (cubed)
- 1 red onion (thinly sliced)
- 1 dl white wine vinegar
- 1 tbsp sugar
- 1 tbsp olive oil
- 1 tsp cinnamon
- Salt and pepper to taste
- Tortillas for serving
- Fresh cilantro (for garnish)
Instructions:
1. Marinate the sliced red onions in white wine vinegar and sugar for about 30 minutes.
2. Heat the olive oil in a pan and add the pumpkin cubes. Sauté for about 5-7 minutes until tender.
3. Add the chorizo cubes to the pan and cook for a few more minutes until the chorizo is browned.
4. Season the mixture with cinnamon, salt, and pepper.
5. Warm the tortillas in a pan or oven.
6. Fill the warm tortillas with the pumpkin-chorizo mixture and top with the pickled red onions.
7. Garnish with fresh cilantro and serve immediately.
