A delicious Spanish-style rustic stew combining spicy chorizo and white beans. Perfect for cold days!

Ingredients:

- 200 g chorizo sausage
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 zucchini
- 400 g white beans (canned or cooked)
- 400 g crushed tomatoes
- 1 tsp paprika powder
- 1 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish

Instructions:

1. Peel and chop the onion and garlic cloves. Dice the bell pepper and zucchini.
2. Heat the olive oil in a large skillet. Add the chopped onion and garlic, and sauté until softened.
3. Add the diced chorizo to the skillet and cook until browned.
4. Add the bell pepper and zucchini, and cook for a few more minutes.
5. Stir in the crushed tomatoes, beans, paprika powder, and cayenne pepper. Season with salt and pepper.
6. Let the stew simmer on low heat for about 20 minutes to allow the flavors to meld.
7. Serve garnished with fresh parsley.
