A delicious Iberian-inspired dish featuring spicy chorizo and juicy chicken, perfect for enjoying even while relaxing in the sauna! Preparation Time: 1 hour
Serving Size: 4
Ingredients:
- 400 g chorizo sausage- 500 g chicken breast fillets
- 1 large onion
- 2 garlic cloves
- 1 red bell pepper
- 1 can (400 g) crushed tomatoes
- 2 dl chicken broth
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Slice the chorizo into pieces and fry them in a large pot over medium heat until golden brown. Remove and set aside.2. Peel and chop the onion and garlic. Add them to the same pot and sauté until the onion is soft.
3. Cut the bell pepper into strips and add it to the pot. Cook for a few more minutes.
4. Cut the chicken breast into bite-sized pieces and add them to the pot. Brown the chicken on all sides.
5. Pour in the crushed tomatoes and chicken broth. Add smoked paprika, salt, and pepper.
6. Return the cooked chorizo to the pot and stir well.
7. Let the pot simmer on low heat for about 30 minutes, until the chicken is cooked through and the flavors have melded together.
8. Serve with fresh parsley on top.
