A delicious and hearty salad featuring spicy chorizo, fresh vegetables, and creamy feta. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200 g chorizo sausage
- 150 g cherry tomatoes
- 1 small red onion
- 1 avocado
- 100 g fresh spinach
- 50 g feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Slice the chorizo sausage and cook it in a hot pan until crispy.
2. Rinse and halve the cherry tomatoes.
3. Peel and slice the red onion into thin rings.
4. Peel and slice the avocado.
5. In a large bowl, combine the spinach, cherry tomatoes, red onion, and avocado.
6. Top the salad with the cooked chorizo.
7. Crumble the feta cheese over the salad.
8. Mix the olive oil and balsamic vinegar, then drizzle the dressing over the salad and season with salt and pepper.
9. Gently toss the salad and serve immediately.
