Ingredients:
- 400 g chorizo sausage
- 600 g chicken pieces (e.g., thighs or breast fillets)
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 400 g canned crushed tomatoes
- 200 ml chicken or vegetable broth
- 1 tsp smoked paprika
- 1 tsp oregano
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Peel and chop the onion and garlic. Slice the red bell pepper into strips.
2. Heat a pan over medium heat and add the sliced chorizo. Cook until it starts to brown.
3. Add the onion, garlic, and bell pepper to the pan. Sauté until the vegetables soften.
4. Add the chicken pieces to the pan and cook until they are nicely colored.
5. Pour the crushed tomatoes and broth into the pan. Season with smoked paprika, oregano, salt, and pepper.
6. Let the stew simmer on low heat for about 30-40 minutes, until the chicken is fully cooked and the flavors have melded together.
7. Serve garnished with fresh parsley.
