Ingredients:
- Blue mussels
- Chorizo sausage
- Fennel
- Garlic
- White wine
- Olive oil
- Salt
- Black pepper
- Fresh parsley
Instructions:
1. Clean the blue mussels thoroughly under running water.
2. Peel and finely chop the garlic, then slice the fennel.
3. Cut the chorizo sausage into slices.
4. Heat olive oil in a large pot and add the chorizo. Cook until it starts to brown.
5. Add the garlic and fennel to the pot, and sauté for a few more minutes until the fennel softens.
6. Pour in the white wine and let it simmer for a few minutes.
7. Add the cleaned blue mussels to the pot, cover with a lid, and cook for about 5-7 minutes until the mussels open.
8. Season with salt and black pepper to taste.
9. Serve with fresh parsley and enjoy!
