Greek Potato Salad with Tzatziki

A refreshing and delicious side dish that complements buffets and spicy grilled foods. Preparation Time: 30 minutes
Serving Size: 4-6 people
Ingredients:
- 800 g potatoes - 1 dl tzatziki
- 1 cucumber
- 1 red onion
- 200 g feta cheese
- 1 dl olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
- Fresh mint or parsley for garnish
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and let cool. 2. Cut the cooled potatoes into cubes.
3. Grate the cucumber coarsely and squeeze out any excess moisture.
4. Finely chop the red onion and crumble the feta cheese.
5. In a bowl, mix together the tzatziki, olive oil, lemon juice, cucumber, red onion, and feta cheese.
6. Gently fold in the potatoes and mix well. Season with salt and pepper.
7. Let the salad chill in the refrigerator for about 15 minutes before serving.
8. Garnish with fresh mint or parsley before serving.
