Ingredients:
- 1 dl quinoa
- 2 dl water
- 1 bell pepper
- 1 cucumber
- 1 avocado
- 1 dl black beans (cooked)
- 1 dl cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lime juice
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Rinse the quinoa under cold water. Cook the quinoa in water for about 15 minutes or until the liquid is absorbed and the quinoa is tender.
2. Chop the bell pepper, cucumber, and cherry tomatoes into small pieces.
3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado if desired.
4. Once the quinoa is cooked, transfer it to a large bowl and add the chopped vegetables, black beans, and mashed avocado.
5. In a separate bowl, mix the olive oil, lime juice, salt, and pepper. Pour the dressing over the bowl and mix well.
6. Garnish with fresh cilantro before serving.
