Ingredients:

- 4 chicken fillets
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 carrots
- 2 potatoes
- 1 red onion
- 1/2 kg cauliflower
- 2 tablespoons sunflower seeds
- 150 g mozzarella cheese

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Season the chicken fillets with salt, black pepper, and balsamic vinegar. Place the fillets in a baking dish.
3. Peel and chop the carrots, potatoes, and red onion. Rinse the cauliflower and cut it into florets. Arrange the vegetables around the chicken fillets in the baking dish.
4. Drizzle olive oil over the vegetables and mix well.
5. Bake in the oven for about 30-35 minutes, until the chicken is cooked through and the vegetables are tender.
6. Serve the dish topped with mozzarella cheese and roasted sunflower seeds.
