Ingredients:
- 500 g chicken fillets
- 2 dl rice
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 bell pepper
- 1 zucchini
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 dl vegetable broth
- 2 tbsp olive oil
- 1 dl cream (optional)
Instructions:
1. Peel and chop the onion, garlic, carrots, bell pepper, and zucchini.
2. Heat olive oil in a large skillet and sauté the onion and garlic until soft.
3. Add the chicken fillets and cook until they are done. Season with salt, black pepper, and paprika.
4. Add the chopped vegetables and rice to the skillet. Mix well.
5. Pour in the vegetable broth and let it simmer on low heat for about 20 minutes, until the rice is cooked and the liquid is absorbed.
6. Add the cream if using, and mix well.
7. Divide the finished dish into meal prep containers and let it cool before freezing.
