A traditional Finnish almond cake that is moist and topped with a delicious almond glaze.
Preparation Time: 1 hour
Serving Size: 10 slices
Ingredients:
- 4 eggs
- 4 dl sugar
- 4 dl all-purpose flour
- 2 tsp baking powder
- 1½ dl milk
- 100 g butter
Topping:
- 150 g almond flour
- 100 g powdered sugar
- 2 egg whites
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Beat the eggs and sugar together until light and fluffy.
3. Mix in the all-purpose flour and baking powder.
4. Add the milk and melted butter, stirring until the batter is smooth.
5. Pour the batter into a greased and floured baking pan.
6. Bake in the oven for about 30-35 minutes, or until the cake is cooked through.
7. Prepare the topping: beat the egg whites until stiff peaks form, then fold in the almond flour and powdered sugar.
8. Spread the topping over the baked cake and return it to the oven until the topping is golden.
9. Allow to cool before serving.
