Ingredients:
- 300 g pasta (e.g., penne or spaghetti) - 200 g fresh spinach
- 200 ml heavy cream
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the pasta cooking water.2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about one minute until fragrant.
3. Add fresh spinach to the skillet and cook until wilted.
4. Pour the heavy cream into the spinach and stir well. Allow the sauce to simmer on low heat for about 5 minutes.
5. Add grated Parmesan cheese and mix until the cheese has melted. If the sauce is too thick, add reserved pasta cooking water as needed.
6. Season with salt and black pepper to taste.
7. Toss the cooked pasta with the sauce and serve immediately.
