A traditional Finnish garlic herring recipe that is perfect as an appetizer or part of a festive meal. Preparation Time: 15 minutes (plus marinating time)
Serving Size: 4-6 servings
Ingredients:
- 1 kg herring
- 5 dl water (for brine)
- 1.5 dl white wine vinegar (for brine)
- 3 tsp salt (for brine)
- 1.5 dl water (for marinade)
- 1 dl oil (for marinade)
- 4-5 garlic cloves (for marinade)
- Black pepper to taste (for marinade)
- Fresh dill for garnish
Instructions:
1. Prepare the herring by cleaning and filleting as necessary.
2. In a pot, combine water, white wine vinegar, and salt to make the brine. Heat until boiling.
3. Add the herring to the boiling brine and cook for about 2-3 minutes. Remove from heat and let cool.
4. In a bowl, prepare the marinade by mixing water, oil, crushed garlic, and black pepper.
5. Once the herring has cooled, add it to the marinade and stir well to ensure the fish is fully coated.
6. Cover the bowl and let it marinate in the refrigerator for at least 12 hours, preferably overnight.
7. Serve the herring garnished with fresh dill.
