White Chocolate Covered Almond Cake

Ingredients
- 100 g margarine - 2 dl sugar
- 3 large eggs (or 4 small)
- 200 g grated potato
- 200 g almond flour
- 1 dl all-purpose flour
- 1 tsp baking powder
- 100 g white chocolate
Instructions
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan. 2. Melt the margarine in a saucepan and let it cool slightly.
3. In a bowl, mix the sugar and eggs. Whisk until the mixture is light and fluffy.
4. Add the cooled margarine to the egg mixture and mix well.
5. Stir in the grated potato, almond flour, all-purpose flour, and baking powder until you have a smooth batter.
6. Pour the batter into the prepared pan and bake in the oven for about 30-40 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the cake to cool before removing it from the pan.
8. Melt the white chocolate in a water bath or microwave. Pour the melted white chocolate over the cake and spread evenly.
9. Let the frosting set before serving.
