A delightful and delicious cloudberry-almond cake that combines the richness of almonds with the sweetness of cloudberries, making it the perfect dessert. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 160 g almond flour
- 2 dl sugar
- 2½ dl all-purpose flour
- 1 tsp baking powder
- 2 tsp potato starch
- 1 egg
- 2 eggs
- 150 g softened butter
- 2 dl cloudberry puree
- 1 dl heavy cream
- 1 tbsp cloudberry liqueur
- whipped cream (for serving)
- fresh cloudberries (for garnish)
Instructions:
1. In a mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
2. Add one egg and mix well.
3. In a separate bowl, combine the almond flour, all-purpose flour, baking powder, and potato starch. Gradually add this dry mixture to the butter-sugar mixture, stirring until a smooth batter forms.
4. Fold in the cloudberry puree and cloudberry liqueur into the batter until well integrated.
5. Pour the batter into a greased cake pan and smooth the surface.
6. Bake in a preheated oven at 175 °C (350 °F) for about 30-40 minutes, or until the cake is cooked through and has a beautiful golden-brown top.
7. Allow the cake to cool before serving. Serve with whipped cream and garnish with fresh cloudberries.
