A delicious and elegant dessert combining creaminess and sweetness, perfect for celebrations or special moments.
Preparation Time: 1 hour + cooling time
Serving Size: 4 servings

Ingredients

- 5 large egg yolks
- 100 g sugar
- Seeds from 1 vanilla bean
- 4 dl heavy cream
- 1 dl light milk
- Brown sugar (for caramelizing on top)
- Fresh berries (for garnish)

Instructions

1. Preheat the oven to 150°C (300°F).
2. In a bowl, whisk together the egg yolks and sugar until the mixture is light and fluffy.
3. Add the vanilla bean seeds and mix well.
4. In a saucepan, heat the heavy cream and light milk until warm but not boiling. Gradually pour this hot mixture into the egg mixture while stirring continuously.
5. Strain the mixture into a clean bowl and pour it into individual serving dishes.
6. Place the serving dishes in a baking tray and fill the tray with hot water halfway up the sides of the dishes.
7. Bake in the oven for about 30-40 minutes, until the mixture is set but still slightly soft in the center.
8. Allow to cool at room temperature, then refrigerate for at least 2 hours.
9. Before serving, sprinkle brown sugar on top and caramelize it with a kitchen torch or under a broiler.
10. Garnish with fresh berries and serve.
