A delicious cloudberry cheese pie that combines sweet cloudberry jam and a soft curd filling. Perfect for dessert or a coffee table treat. Preparation time: 1 hour
Serving size: 8-10 servings
Ingredients
- 1½ dl cloudberry jam - 100 g soft margarine
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1 egg
- 1 cup sour cream
- 1 dl sugar
- 2½ dl all-purpose flour
- 200 g cottage cheese
Instructions
1. In a bowl, cream the soft margarine and sugar together until fluffy. 2. Add the egg to the mixture and mix well.
3. In a separate bowl, combine the baking powder with the all-purpose flour, then gently fold this mixture into the margarine-sugar-egg mixture, being careful not to overmix.
4. Line a pie dish with the dough.
5. Spread the cloudberry jam evenly over the dough.
6. In another bowl, mix the sour cream, cottage cheese, and vanilla sugar together. Pour this mixture over the jam.
7. Bake at 175°C for about 30-40 minutes, or until the top is beautifully golden brown.
8. Allow to cool before serving.
