Ingredients:

For the Pie Crust:
- 125 g butter
- 2 dl all-purpose flour
- 1 dl potato flour
- 1/2 tsp salt
- 1/2 dl cold water
For the Filling:
- 200 g Västerbotten cheese, grated
- 3 eggs
- 2 dl cream
- 1/2 tsp black pepper
- 1/2 tsp salt
For the Roe Mousse:
- 100 g roe
- 1 dl sour cream
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 dl chopped chives

Instructions:

1. Prepare the pie crust: Melt the butter and mix it with the all-purpose flour, potato flour, and salt. Add the cold water and knead the dough until smooth. Press the dough into a pie dish, covering the bottom and sides.
2. Pre-bake the crust in a preheated oven at 200°C (392°F) for about 10 minutes.
3. In a bowl, combine the filling ingredients: grated cheese, eggs, cream, black pepper, and salt. Pour the filling over the pre-baked crust.
4. Bake the pie at 200°C (392°F) for about 25-30 minutes, until the filling is set and the top is beautifully golden brown.
5. For the roe mousse: Mix all the ingredients in a bowl until well combined. Let it chill in the refrigerator for about 30 minutes to develop the flavors.
6. Serve the Västerbotten cheese pie with the roe mousse on the side.
