Chanterelle Quiche with Västerbotten Cheese

Serving Size: 6 servings
Ingredients:
- 200 g ready-made pie crust
- 300 g chanterelle mushrooms
- 150 g Västerbotten cheese (or alternatively Emmental or Parmesan cheese)
- 3 eggs
- 2 dl cream
- 1 onion
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh herbs (such as thyme or parsley) for garnish
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Roll out the pie crust and line a pie dish with it.
3. Peel and chop the onion. Sauté the onion in butter in a pan until soft.
4. Add the cleaned and chopped chanterelles to the pan and cook for a few minutes until the moisture has evaporated.
5. In a bowl, crack the eggs and mix in the cream. Season with salt and pepper.
6. Grate the Västerbotten cheese and add it to the chanterelle and onion mixture. Mix well.
7. Pour the chanterelle and cheese mixture into the pie crust, and then pour the egg mixture on top.
8. Bake the quiche in the oven for about 30-35 minutes until the top is beautifully golden brown.
9. Allow to cool slightly before serving and garnish with fresh herbs.
10. Serve warm or at room temperature. Enjoy!
