Serving Size: 8 servings
Ingredients:
- 4 large eggs
- 1 1/2 cups sugar
- 6 cups grated carrots
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 3 teaspoons baking powder
- 2 teaspoons cinnamon (optional)
- 7 oz cream cheese
- 1/2 cup oil
- 1/2 cup nuts (optional)
Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a bowl, crack the eggs and add the sugar. Whisk the mixture until it is light and fluffy.
3. Stir in the grated carrots and oil, mixing well.
4. In a separate bowl, combine the flour, baking soda, baking powder, and cinnamon. Gradually add the dry mixture to the wet mixture, stirring until smooth.
5. If desired, fold in the nuts.
6. Pour the batter into a greased pie dish.
7. Bake in the oven for about 40-50 minutes, or until the pie is cooked through (check with a toothpick for doneness).
8. Allow to cool before serving. Enjoy!
