Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g pancetta or bacon
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Once the pasta is cooked, drain it, reserving about 1 cup of the cooking water.
3. Heat a skillet over medium heat and cook the pancetta or bacon until crispy. Add the minced garlic and sauté for another minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and pepper.
5. Add the hot pasta to the skillet with the pancetta and garlic mixture. Toss well to combine.
6. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs cook gently with the heat of the pasta.
7. If needed, add reserved cooking water to loosen the sauce.
8. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
