Summer Vegetable Soup (Äidin kesäkeitto)

A refreshing and hearty summer soup packed with fresh vegetables. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1/2-1 liter of water
- 1 teaspoon salt
- 500 grams new potatoes
- A bunch of new carrots
- 1 small new cauliflower
- 600-700 ml milk
- 1-2 tablespoons butter
- Fresh dill (optional)
Instructions:
1. Peel and dice the new potatoes into cubes.
2. Wash and slice the new carrots.
3. Cut the cauliflower into small florets.
4. Bring the water to a boil in a pot and add the salt.
5. Add the potatoes to the pot and cook for about 10 minutes.
6. Add the carrots and cauliflower to the soup. Continue cooking for another 10-15 minutes, until all vegetables are tender.
7. Pour the milk into the pot and add the butter. Heat the soup gently, but do not let it boil.
8. Season with fresh dill before serving, if desired.
9. Serve the summer soup warm.
