Serving Size: 4-6 servings
Ingredients:
- 1 whole chicken (about 3.3 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 4 cloves garlic, crushed
- 1 lemon, halved
- 2-3 sprigs fresh rosemary
- 4-5 potatoes, diced
- 3-4 carrots, sliced
- 1 red onion, cut into wedges
- 1 cup chicken or vegetable broth
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rub the chicken with olive oil, salt, black pepper, and paprika. Stuff the crushed garlic cloves inside the chicken.
3. Place the lemon halves and rosemary inside the chicken cavity.
4. Place the chicken in the Dutch oven. Surround it with the diced potatoes, sliced carrots, and onion wedges.
5. Pour the chicken or vegetable broth into the bottom of the Dutch oven.
6. Cover the pot with a lid or foil and roast in the oven for about 1 hour. Remove the lid and roast for an additional 15-30 minutes, until the skin is golden brown and the internal temperature reaches 165°F (75°C).
7. Let the chicken rest for 10 minutes before serving.
