A refreshing potato salad made without mayonnaise or dairy, perfect for summer barbecues or as a light meal.
Preparation Time: 30 minutes
Serving Size: 4-6 people

Ingredients:

- 800 g potatoes
- 1 red onion
- 200 g cherry tomatoes
- 1 cucumber
- 1 dl fresh parsley
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Salt to taste
- Black pepper to taste

Instructions:

1. Peel the potatoes and boil them in salted water until tender but not falling apart. Drain and let cool.
2. Cut the cooled potatoes into cubes.
3. Chop the red onion, slice the cherry tomatoes and cucumber.
4. Finely chop the parsley.
5. Combine all ingredients in a large bowl.
6. In a separate bowl, mix olive oil, apple cider vinegar, salt, and black pepper, then pour the dressing over the salad.
7. Gently toss to combine all ingredients well.
8. Let the salad chill in the refrigerator for about 15 minutes before serving.
