Ingredients:
- 400 g pasta (e.g., penne or spaghetti)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, crushed
- 400 g canned crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 200 g fresh spinach
- 150 g mozzarella cheese, diced
- Grated Parmesan cheese, for serving
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and cook for another minute.
4. Pour in the crushed tomatoes and season with oregano, salt, and black pepper. Let it simmer for about 10 minutes.
5. Stir in the fresh spinach into the sauce and mix until wilted.
6. Combine the cooked pasta with the sauce. Add a bit of reserved cooking water if needed for a nice consistency.
7. Fold in the diced mozzarella and let it melt slightly.
8. Serve the dish topped with grated Parmesan cheese.
