A delicious and creamy pasta dish made with pancetta, eggs, and Parmesan cheese. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 150 g pancetta or bacon
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water until al dente, according to the package instructions.
2. Meanwhile, in a pan, cook the pancetta or bacon until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the spaghetti is cooked, drain it and reserve a bit of the cooking water.
5. Combine the hot spaghetti with the pancetta in the pan. Remove the pan from the heat and quickly add the egg mixture, stirring continuously to cook the eggs with the residual heat.
6. If needed, add reserved cooking water until the sauce reaches a creamy consistency.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
