A refreshing and nutrient-packed dish, perfect for a light lunch or side. This salad is easy and quick to prepare, bursting with flavor. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 1 can chickpeas (about 400 g)- 200 g feta cheese
- 1 cucumber
- 1 red bell pepper
- 1 small red onion
- 100 g cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley or mint for garnish (optional)
Instructions:
1. Rinse the chickpeas under cold water and drain well.2. Dice the feta, cucumber, bell pepper, and red onion.
3. Halve the cherry tomatoes.
4. In a large bowl, combine all the ingredients.
5. Add the olive oil and lemon juice. Season with salt and pepper.
6. Gently mix until all ingredients are well combined.
7. Garnish with fresh parsley or mint before serving.
