This delicious and nutritious cabbage and ground beef stew is a perfect option for a weeknight dinner. It's easy to prepare and packed with flavor! Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 1 chopped red chili pepper
- 4 carrots, chopped
- 0.5 liters of water
- 2 crumbled chicken broth cubes or chicken broth as needed
- Just under ½ dl of apple cider vinegar
- 2 chopped onions
- 3 peeled garlic cloves, halved
- 2 tablespoons of dried lovage
- 10 allspice berries
- Fresh or frozen lingonberries to taste
- 2 tablespoons of dark balsamic vinegar
- 1 bay leaf
- 400 g of ground beef
Instructions:
1. Heat a bit of oil in a pot and add the chopped onions and garlic. Sauté until they are soft.
2. Add the ground beef and brown it thoroughly.
3. Stir in the chopped carrots and chili pepper, mixing well.
4. Pour in the water and add the chicken broth cubes. Bring to a boil over medium heat for about 10 minutes.
5. Add the apple cider vinegar, lovage, allspice, balsamic vinegar, and bay leaf. Stir and simmer for another 15 minutes.
6. Taste and adjust seasoning with salt or pepper as needed.
7. Serve the cabbage and ground beef stew with fresh lingonberries on the side.
