A refreshing spring potato salad that combines the delicious flavors of tartar sauce. This salad is a perfect side dish for a May Day brunch or an evening gathering.
Preparation Time: 30 minutes
Serving Size: 4-6
Ingredients:
- 600 g new potatoes
- 2-3 small carrots
- 100 g mayonnaise
- 2 tbsp capers
- 4-5 small pickles
- 1 dl fresh parsley
- Salt and pepper to taste
Instructions:
1. Boil the potatoes with their skins in salted water until tender. Drain and let cool.
2. Peel and slice the carrots into thin rounds.
3. In a bowl, prepare the dressing by mixing mayonnaise, capers, chopped pickles, and finely chopped parsley. Season with salt and pepper.
4. Cut the cooled potatoes into cubes and combine them with the carrots.
5. Add the dressing to the potato mixture and gently stir until all ingredients are well combined.
6. Garnish the salad with the remaining parsley and serve immediately, or let it chill in the fridge before serving.
