Ingredients:
- 200 g fresh beef (e.g., tenderloin)
- 1 small red onion
- 1 tbsp capers
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1 fresh egg yolk
- Fresh chives for garnish
Instructions:
1. Finely chop the beef into small pieces.
2. Peel and finely chop the red onion.
3. In a bowl, mix the beef, red onion, capers, Dijon mustard, olive oil, and Worcestershire sauce. Season with salt and pepper.
4. Place the mixture on a plate and shape it into a round patty.
5. Add the egg yolk on top of the patty.
6. Garnish with fresh chives and serve immediately with fresh bread cubes or salad.
