Ingredients:

- Beef Tartare:
- 200 g fresh beef (e.g., tenderloin)
- 1 egg yolk
- 1 tbsp Dijon mustard
- 1 tbsp capers, finely chopped
- 1 tbsp red onion, finely chopped
- 1 tbsp parsley, finely chopped
- Salt and black pepper to taste
- Olive oil
- Moose Tartare:
- 200 g fresh moose meat
- 1 egg yolk
- 1 tbsp balsamic vinegar
- 1 tbsp pickles, finely chopped
- 1 tbsp chives, finely chopped
- Salt and black pepper to taste
- Olive oil

Instructions:

1. Prepare the meat: Cut both the beef and moose into small cubes or lightly grind.
2. Mix the ingredients: Divide the meat into two bowls. Add the respective seasoning ingredients to each bowl (for beef: mustard, capers, red onion, parsley; for moose: balsamic vinegar, pickles, chives).
3. Season: Add salt and black pepper to taste, along with a drizzle of olive oil to the mixture.
4. Serve: Shape the tartars on plates and create a small indentation in the center. Place the egg yolk on top of the indentation. Garnish with fresh herbs and serve immediately.
