A delicious and refreshing birthday cake perfect for celebrations with friends. The marzipan keeps it from being overly sweet, making it enjoyable for children as well. For adults, you can add moisture with liqueur. Preparation Time: 1 hour + cooling
Serving Size: 12 servings
Ingredients:
- 200 g butter - 200 g sugar
- 4 eggs
- 300 g all-purpose flour
- 2 tsp baking powder
- 100 ml milk
- Juice and grated zest of 1 lemon
- 200 g cream cheese
- 100 g powdered sugar
- 200 g marzipan
- 100 ml liqueur (optional)
Instructions:
1. In a bowl, cream together the butter and sugar until light and fluffy.2. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the flour and baking powder. Gradually add to the egg mixture, alternating with the milk. Stir in the lemon juice and zest.
4. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 30-35 minutes or until a toothpick comes out clean. Allow to cool.
5. Prepare the filling by mixing the cream cheese and powdered sugar. If desired, add liqueur to the filling.
6. Once the cake is cooled, cut it in half and fill with the cream cheese mixture. Cover the top with the remaining filling.
7. Roll out the marzipan and cover the cake. Decorate as desired.
