A delicious and quick creamy spinach pasta perfect for a weeknight meal, ready in just 30 minutes. Serves: 4.
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain the pasta and reserve a bit of the cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until golden brown.
3. Add the fresh spinach and cook until wilted, about 2-3 minutes.
4. Pour the cream into the skillet and mix well. Let it simmer on low heat for a few minutes.
5. Add the cooked pasta to the skillet and stir well. If the sauce is too thick, add a little reserved cooking water.
6. Stir in the grated Parmesan cheese and season with salt and pepper.
7. Serve immediately, garnished with fresh basil if desired.
