A delightful vegetarian dish that combines flavor and nutrition, perfect for both casual meals and special occasions.
Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 250 g pasta (e.g. penne or fusilli)
- 200 g tofu
- 1 red onion
- 2 garlic cloves
- 1 bell pepper (preferably red or yellow)
- 200 g cherry tomatoes
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Cut the tofu into cubes and sauté in a pan with olive oil over medium heat until golden brown. Remove the tofu from the pan and set aside.
3. Chop the red onion and garlic. Add them to the same pan and sauté for a few minutes until translucent.
4. Slice the bell pepper and add it to the pan. Cook for a few more minutes until the pepper is tender.
5. Add the cherry tomatoes, cooked tofu, soy sauce, oregano, salt, and pepper to the pan. Mix well and heat for another couple of minutes.
6. Add the cooked pasta to the pan and combine all ingredients. Allow to heat through for a moment.
7. Serve the dishes garnished with fresh basil if desired.
