Ingredients:
- 1 can chickpeas
- 1 cup heavy cream
- 1 cup shredded cheese
- 2 packages plain tofu
- 3 teaspoons spicy African spice blend
- 1 bag whole grain pasta
- 1 tub cream cheese, e.g. sun-dried tomato
- 2 tablespoons cooking oil
Instructions:
1. Cook pasta until al dente in salted boiling water. Drain the pasta.
2. Pour the drained pasta into a large baking dish and mix in the cream cheese.
3. Cube the tofu and season it with the spicy African spice blend.
4. Add the cubed tofu and chickpeas to the pasta mixture.
5. Pour in the heavy cream and cooking oil, mixing well.
6. Sprinkle shredded cheese over the top of the mixture.
7. Bake in the oven at 200°C (400°F) for about 20-25 minutes, until the top is golden brown and crispy.
