A delicious and easy tofu stew that combines whole grain pasta, vegetables, and protein-rich tofu. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 1 tsp chili powder
- 2 tbsp tomato paste
- Cold-pressed canola oil
- 300 g whole grain pasta (e.g., fusilli)
- 400 g smoked tofu
- 400 g frozen vegetables (sun-dried vegetables)
- 2 onions
Instructions:
1. Cook the pasta according to package instructions without salt. Drain the pasta, reserving 1-2 dl of the cooking water.
2. Slice the onions and sauté them in canola oil over medium heat until soft.
3. Add the frozen vegetables and chili powder to the onions and cook for a few minutes.
4. Stir in the tomato paste and mix well. If the mixture is too dry, add a bit of the reserved cooking water.
5. Cube the tofu and add it to the stew, stirring gently to avoid breaking it too much.
6. Let the stew simmer on low heat for about 5-10 minutes until all ingredients are heated through.
7. Serve the tofu stew with the pasta.
