A delicious and easy recipe combining tofu and colorful vegetables in ready-made Ma Po Tofu sauce. Perfect as a light weeknight meal. Preparation Time: 30 minutes
Serving Size: 3 servings
Ingredients:
- 2 bell peppers - 2 red onions (or regular onions)
- 1 small eggplant
- about 300 g tofu
- a handful of fresh shiitake mushrooms (or other mushrooms)
- just under a tablespoon of oil (e.g., canola oil)
- a packet of ready-made Ma Po Tofu sauce
Instructions:
1. Chop the vegetables and tofu into small pieces, leaving the mushrooms whole. 2. Heat the oil in a pot over medium heat. Add the eggplant cubes and sauté with a lid on for a few minutes until they are colored.
3. Add the bell pepper pieces and chopped onions. Sauté for a few more minutes.
4. Add the shiitake mushrooms and stir. Sauté with the lid on for a few minutes.
5. Add the tofu pieces and pour the Ma Po Tofu sauce over it. Mix well.
6. Cover with a lid and let it simmer for about five minutes, stirring occasionally.
7. Serve hot.
