Easy Tofu Noodle Soup

Ingredients:
- 100 g glass noodles
- 1.5 liters coconut milk
- 200 g tofu
- 2 tbsp green curry paste
- 1 tbsp lemongrass paste
- 150 g kale
- 2 garlic cloves
- 1 onion
- Salt and pepper to taste
- Fresh herbs for garnish (e.g., cilantro)
Instructions:
1. Cook the glass noodles according to package instructions. Drain and set aside.
2. Peel and chop the onion and garlic. Heat a splash of oil in a pot and sauté the onion and garlic until soft.
3. Add the green curry paste and lemongrass paste to the pot, stirring well to combine.
4. Pour in the coconut milk and stir. Bring to a boil.
5. Cut the tofu into cubes and add it to the soup. Simmer on low heat for about 5-10 minutes.
6. Add the chopped kale to the soup and cook for a few more minutes until the kale is tender.
7. Season with salt and pepper to taste.
8. Serve the hot soup over the glass noodles and garnish with fresh herbs.
