A delicious and quick tofu vegetable stir-fry that highlights fresh flavors and diverse ingredients. Preparation Time: About 30 minutes

Ingredients:
- 400 g mixed vegetables (Thai wok mix)
- 65 g red bell peppers
- 250 g tofu
- 2 tbsp soy sauce
- 35 g mushrooms
- Water
- Grated ginger
- Noodles (wheat, raw weight)
- Salted peanuts
- Canola oil
- 1 onion
- 2 cloves garlic
Instructions:
1. Cook the noodles according to the package instructions and drain.
2. Peel and finely chop the onion and garlic cloves.
3. Cube the tofu and fry it in canola oil in a pan until golden brown.
4. Add the onion, garlic, mushrooms, and red bell peppers to the pan. Sauté until the vegetables are tender.
5. Add the mixed vegetables to the pan and stir-fry for a few more minutes.
6. In a bowl, mix together the soy sauce, grated ginger, and a little water. Pour the mixture into the pan and stir well.
7. Add the cooked noodles and mix everything together. Allow to heat for a moment.
8. Serve the stir-fry topped with salted peanuts.
