Vegan Meatless Casserole Buns

These delicious vegan buns are packed with flavor and are easy to make. They are perfect as a main dish or a side. Preparation Time: 45 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 dl light soy granules
- 4 dl water
- 1 vegetable broth cube
- 300 g tofu or cottage cheese (cottage cheese used in this recipe)
- 200 g cottage cheese (total 500 g)
- 1 dl rolled oats
- 1 onion
- 2 garlic cloves
- 1 tbsp soy sauce
- 1 tsp paprika powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 dl fresh herbs (e.g. parsley or basil)
- 2 tbsp oil for frying
Instructions:
1. Soak the soy granules in hot water and add the vegetable broth cube. Let it sit for about 10 minutes.
2. Finely chop the onion and garlic. Sauté them in oil in a pan until soft.
3. In a bowl, mix the soaked soy granules, sautéed onions and garlic, tofu or cottage cheese, rolled oats, soy sauce, paprika powder, salt, black pepper, and chopped herbs. Mix well.
4. Grease a baking dish and pour the mixture into it. Shape it into an even layer.
5. Bake in a preheated oven at 180°C (350°F) for about 30 minutes, until the top is beautifully golden brown.
6. Let it rest for a moment before serving.
