This delicious Penne Beef Casserole is bursting with flavors from crushed tomatoes, pecorino cheese, and fresh basil, complemented by a creamy cheese sauce on top.
Ingredients:
- 500 g penne pasta - Beef Mixture:
- 1 tbsp olive oil
- 1 red onion, chopped
- 2 garlic cloves, minced
- 400 g ground beef (10% fat)
- 1 beef bouillon cube
- Salt to taste
- Paprika to taste
- Black pepper to taste
- Oregano to taste
- Fresh basil, chopped
- Sauce:
- 2 dl pasta cooking water
- 400 g crushed tomatoes
- 2 large eggs
- 2 tbsp grated Pecorino cheese
- 1 tsp balsamic vinegar
- Salt and black pepper to taste
- 2 tbsp fresh basil, chopped
- Topping:
- 2 dl cooking cream (10%)
- 1 large egg
- 1 dl grated Emmental cheese
- 1 tsp garlic powder
- Salt and black pepper to taste
- Butter or oil for greasing the baking dish
Instructions:
1. Cook the penne pasta according to package instructions. Reserve 2 dl of the cooking water for the sauce. 2. Finely chop the onion and sauté it in olive oil. Add the ground beef and brown it while breaking it apart. Season with the bouillon cube and spices (about 0.5 tsp each, more herbs to taste).
3. In a large pot, combine the drained pasta and the beef mixture. Stir in the chopped fresh basil. Grease a baking dish and transfer the mixture into it, spreading it evenly.
4. Measure the reserved cooking water into a bowl. Mix in the crushed tomatoes. Whisk in the eggs, Pecorino cheese, and balsamic vinegar. Add a pinch of salt and pepper. Pour this mixture evenly over the pasta and beef mixture.
5. In another bowl, combine the cooking cream, egg, grated cheese, and seasonings. Pour this mixture evenly over the casserole, smoothing the top.
6. Bake in a preheated oven at 200°C (390°F) for about 30-40 minutes. Serve and enjoy!
