Vegetable Pasta Bake

A delicious and hearty vegetable pasta dish with feta cheese.
Preparation Time: 30 minutes
Serving Size: 4 servings

Ingredients

- 0.25 tsp salt
- 3 tbsp balsamic vinegar
- 1 tsp sugar
- 1 dl olives, pitted and sliced
- 2 bell peppers, diced
- 4 onions, chopped
- 200 g Arla Apetina, 8% feta cheese, crumbled
- 50 g butter
- 3 cloves garlic, minced
- 4 parsnips, diced
- 6 dl pasta (e.g. penne)
- 4 carrots, diced
- 4 tomatoes, diced
- 2 tbsp rosemary, chopped
- zucchini, diced

Instructions

1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. In a large skillet, melt the butter and add the chopped onions and minced garlic. Sauté until the onions are soft.
3. Add the diced bell peppers, carrots, parsnips, and zucchini. Sauté until the vegetables are slightly tender.
4. Stir in the drained pasta, olives, diced tomatoes, and rosemary. Mix well.
5. Season the mixture with salt, balsamic vinegar, and sugar. Stir and heat for a few more minutes.
6. Crumble the feta cheese over the pasta and gently mix it in.
7. Serve warm.
